Irish Apple Crumble Cake
Ingredients:
- ½ C. butter
- 2/3 C. light brown sugar
- 2 large eggs
- 1 C. flour, sifted
- 1 tsp. baking powder
- Pinch of salt
- 1 tsp. ground cinnamon
- 1 large cooking apple
Preparation:
Preheat the oven to 350 degrees F, grease and line a 8” cake pan with a removable base. With an electric had mixer, beat the butter and sugar in a large bowl until smooth. Add the eggs, one at a time, mixing until they are incorporated. Fold in the flour, baking powder, salt, and cinnamon until you have a thick batter. Stir in the apple and pour the batter into the cake pan. The batter will be thick, so use a spatula to spread across the base of the pan. In a bowl, use your fingers to combine the ingredients for the crumble. Sprinkle the crumble topping on top of the batter. Bake in the oven for 40-45 minutes or until a skewer inserted into the center comes out clean. Remove from the oven and leave to cool.
